Heather’s Chocolate Protein Energy Balls
These Chocolate Protein Energy Balls are perfect for a quick pre-workout snack, a mid-afternoon pick-me-up, or a sweet treat whenever your cravings strike. Ingredients:
- 1 cup rolled oats
- 1/2 cup chocolate protein powder (I use Shakeology)
- 1/4 cup almond butter
- 1/4 cup honey or maple syrup
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional: 2 tablespoons mini chocolate chips, shredded coconut, or chopped nuts for rolling
Instructions:
- Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chocolate protein powder, unsweetened cocoa powder, and a pinch of salt. Stir until well combined.
- Add Wet Ingredients: Add the almond butter, honey (or maple syrup), and vanilla extract to the dry ingredients. Mix everything together until you have a thick, sticky dough.
- Form Balls: Using your hands, scoop out about a tablespoon of the dough and roll it between your palms to form a ball. Repeat with the remaining dough until you’ve used it all up.
- Optional Coating: If desired, roll the energy balls in mini chocolate chips, shredded coconut, or chopped nuts for an extra burst of flavor and texture.
- Chill and Enjoy: Place the energy balls on a plate or baking sheet lined with parchment paper and chill them in the refrigerator for at least 30 minutes to firm up. Once chilled, they’re ready to enjoy!
