Healthy Snickers Bars

Ingredients:

1 1/2 Cups Almond Flour

3 tablespoons melted coconut oil

2 tablespoons honey or maple syrup

1 tsp vanilla extract

Caramel Layer:

1 cup pitted Medjool dates, softened in warm water

2 tbs nut butter of choice

1 tsp vanilla

1/2 cups peanuts

Chocolate Layer:

1 1/3 cup chocolate chips

2 tsp coconut oil

Directions:

Combine the ingredients for the shortbread layer. Press into a parchment liner load pan and bake at 350 for about 14 minutes or until lightly brown. While cooling down, combine the caramel layer ingredients into a food processor until well combined.

When the shortbread is completely cooled, layer the caramel layer on top and spread evenly. Sprinkle the peanuts over the caramel layer and slightly press down. Put in the freezer for a few minutes. While in the freezer, melt your chocolate and coconut oil together.

Cut the snickers bars into desired size and then dip in melted chocolate. Place back in the freezer until firmed up!
