Ingredients:
- 2 cups gluten-free rolled oats
- 1 scoop (about 30g) vanilla protein powder- I use shakeology
- 1 ripe banana, mashed
- 1/4 cup natural peanut butter
- 2 tablespoons ground flaxseed
- 2 tablespoons chia seeds
- 1 1/2 cups almond milk (or any milk of your choice)
- 1 cup fresh blueberries (or frozen, thawed and drained)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a baking dish with cooking spray or coconut oil.
- In a large mixing bowl, combine the rolled oats, protein powder, mashed banana, peanut butter, ground flaxseed, chia seeds, and almond milk. Mix well until all ingredients are evenly combined.
- Gently fold in the blueberries into the oat mixture.
- Pour the mixture into the prepared baking dish and spread it out evenly.
- Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and the edges are slightly crispy.
