Protein Oatmeal and greek yogurt cups
Ingredients:
- 1 cup gluten-free rolled oats
- 1/4 cup natural peanut butter
- 2 tablespoons honey
- 1 scoop (about 30g) chocolate protein powder
- 1/4 cup unsweetened almond milk (or any milk of your choice)
- Greek yogurt, for filling
- Toppings: honey, fresh fruit (such as berries, sliced bananas), peanut butter
Instructions:
- In a mixing bowl, combine the rolled oats, peanut butter, honey, chocolate protein powder, and almond milk. Mix well until all ingredients are thoroughly combined and the mixture becomes sticky.
- Take a mini muffin tin and either grease it lightly or line it with paper liners.
- Press the oatmeal mixture firmly into each cavity of the mini muffin tin, forming a cup shape. Make sure to press down firmly to compact the mixture.
- Place the muffin tin in the refrigerator and let it chill for at least 1 hour, or until the oatmeal cups are firm and set.
- Once the oatmeal cups are set, carefully remove them from the muffin tin.
- Fill each oatmeal cup with Greek yogurt.
- Top half of the oatmeal cups with a drizzle of honey and your choice of fresh fruit, such as berries or sliced bananas.
- Top the remaining oatmeal cups with a dollop of peanut butter and sliced bananas.
- Serve and enjoy these delightful Mini Oatmeal Cups filled with creamy Greek yogurt and topped with your favorite flavors!
