Protein Oatmeal and greek yogurt cups

Ingredients:

  • 1 cup gluten-free rolled oats
  • 1/4 cup natural peanut butter
  • 2 tablespoons honey
  • 1 scoop (about 30g) chocolate protein powder
  • 1/4 cup unsweetened almond milk (or any milk of your choice)
  • Greek yogurt, for filling
  • Toppings: honey, fresh fruit (such as berries, sliced bananas), peanut butter

Instructions:

  1. In a mixing bowl, combine the rolled oats, peanut butter, honey, chocolate protein powder, and almond milk. Mix well until all ingredients are thoroughly combined and the mixture becomes sticky.
  2. Take a mini muffin tin and either grease it lightly or line it with paper liners.
  3. Press the oatmeal mixture firmly into each cavity of the mini muffin tin, forming a cup shape. Make sure to press down firmly to compact the mixture.
  4. Place the muffin tin in the refrigerator and let it chill for at least 1 hour, or until the oatmeal cups are firm and set.
  5. Once the oatmeal cups are set, carefully remove them from the muffin tin.
  6. Fill each oatmeal cup with Greek yogurt.
  7. Top half of the oatmeal cups with a drizzle of honey and your choice of fresh fruit, such as berries or sliced bananas.
  8. Top the remaining oatmeal cups with a dollop of peanut butter and sliced bananas.
  9. Serve and enjoy these delightful Mini Oatmeal Cups filled with creamy Greek yogurt and topped with your favorite flavors!

This no-bake version of the recipe eliminates the need for oven baking, making it a quick and easy option for a nutritious breakfast or snack. Feel free to customize the toppings according to your taste preferences!
