Baked Protein Pancake Bowls

These pancake bowls are not only delicious but also packed with protein, making them a perfect choice for a satisfying and nutritious breakfast or snack. Feel free to customize the recipe with your favorite flavors and toppings!

Ingredients:

  • 1/4 cup gluten-free pancake mix
  • 1 scoop protein powder (flavor of your choice)
  • 1/4 cup Greek yogurt
  • 1/4 cup almond milk
  • Splash of Vanilla
  • 1 TBS honey or maple syrup
  • Optional toppings: fresh fruit, nuts, seeds, maple syrup, etc.

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a small oven-safe bowl or ramekin with cooking spray or oil.
  2. Mix Dry Ingredients: In a small mixing bowl, combine the gluten-free pancake mix and protein powder. Stir until well combined.
  3. Add Wet Ingredients: Add the Greek yogurt and almond milk to the dry ingredients. Mix until a smooth batter forms. If the batter is too thick, you can add a little more almond milk to reach the desired consistency.
  4. Fill Bowl: Pour the batter into the greased bowl or ramekin, filling it about 3/4 of the way full.
  5. Bake: Place the filled bowl in the preheated oven and bake for 15-20 minutes, or until the pancake is set and slightly golden on top.
  6. Cool and Serve: Remove the baked pancake bowl from the oven and let it cool for a few minutes. Once cooled slightly, you can add your desired toppings such as fresh fruit, nuts, seeds, or a drizzle of maple syrup.
  7. Enjoy: Dig in and enjoy your delicious single serve baked protein pancake bowl!

These are the best meal prep dishes fyi! Food grade, oven safe, microwave safe, freezer safe, dishwasher safe and airtight! I love that I can take things from oven to freezer without have to move containers. They are also the perfect serving size!

I did these three variations:

Blueberry Vanilla- Vanilla Protein Powder and mix in fresh or frozen blueberries

Chocolate Banana- Chocolate Protein Powder with sliced banana and chocolate chips

Strawberry Vanilla- Vanilla Protein Powder with sliced Strawberries drizzle with peanut butter when removed from the over!
